Basic Stir Fry
2-4 heads baby bok choy, chopped
1 red bell pepper
4 cloves garlic, chopped
1-2 T ginger, minced
8 oz. mushrooms, sliced or chopped
2 heads broccoli florets, chopped
1-2 green onions, sliced
8 oz tofu, cubed
shoyu or tamari to taste
chili paste to taste
toasted sesame seeds to garnish
splash of rice vinegar
Directions:
In a large skillet or wok, saute the mushrooms in a little water or broth until mushrooms begin to release their liquid. Add broccoli and cover. Cook until about halfway done, about five minutes. Add bell pepper and cook for a few more minutes, uncovered. When veggies are done to your liking, add bok choy and tofu. Stir to mix, then add remaining seasonings to taste.
Serving Suggestions:
Serve over basic brown rice.
Serve over basic grains. I like millet.
Serve over whole grain noodles. I like soba.
